For making this super delicious recipe, you will be needing the following ingredients in three sets to prepare Sauce, vegetables and pasta respectively;
Ingredients
Ingredients for Pasta
1. Elbow Pasta: 2 cups or 200 gms
2. Salt to taste: A pinch or ¼ teaspoon
3. Oil: 1/2 teaspoon
Ingredients for Preparing Vegetables:
Olive/butter: 2 teaspoons
Onion Chopped: half or 1/2
Carrot: 1 Small
Capsicum Chopped: half or 1/2
Corns: Handful
Salt: 1/2 teaspoon
Black Pepper Powder: ½ teaspoon
White Pepper Powder: ½ teaspoon
Soya Sauce: 2 tablespoons
Vinegar: 1 tablespoon
Ingredients for Sauce
Butter: 4 tablespoons
Maida: 4 tablespoons
Milk: 2 Cups
Salt: 1/2 teaspoon
Black Pepper Powder: 1/2 teaspoon
Red Chilly Flakes: ½ teaspoon
Mixed Herb Seasoning: 1/2 teaspoon
Grated Cheese: 4-5 tablespoons
Instructions:
1. Boil Pasta as per the instructions on the packet. Or follow the below process.
How to Boil Pasta?
i. Take 5-6 cups of water and put it in the pan on the stove for boiling. While the water is boiling, add salt and oil and stir to mix it. (Keep in mind to add salt before adding pasta to give it a good salty taste)
ii. As soon as the water starts to boil, add pasta. Let it boil on a medium flame for the next 7-8 minutes or until it is cooked up to 80%.
iii. No strain the pasta and put some cold water on it to avoid it from sticking together.
iv. Now your pasta is boiled. Put it aside to let it strain further
2. Steps to Prepare Vegetables:
Meanwhile, the pasta is boiling, you prepare the vegetables.
i. In a pan add two teaspoons of oil or butter on a medium flame. Once the oil is heated, add garlic, black pepper, white pepper and let it fry for over 30-40 seconds or until it’s light brown.
ii. Now add onion and let it cook for one to two minutes and then add the rest of the vegetables. Add soya sauce and vinegar. Sauté the vegetables for 2-4 minutes. Keep on tossing the vegetables. Add salt, stir and put the pan of vegetables aside.
iii. You can also add chicken or mushrooms if you want to at this point in time.
3. Steps to Prepare Sauce
• To prepare a white sauce, add butter to a pan on a medium flame. Once the butter is completely melted, add four tablespoons of white flour/maida. Mix the mixture and keep tossing it over low to medium flame for 4-5 minutes or until the color of the mixture is changed from yellow to pale. Continuously toss it.
• Once the color of flour has changed, start adding the milk gradually. Little at a time and keep on mixing the mixture to avoid lumps. Mix until the mixture becomes slightly thicker. You can also mix it with the whisker to break the lumps only. After mixing it for 3-4 minutes, you will see the cream becoming thicker and smoother.
• Add salt, black pepper powder, red chili flakes and mix herb seasonings. Cook salt for 3-4 minutes on a flame. To check whether the salt is in the right consistency or not. Use the back of the spoon, if the sauce is neither too runny nor thick, it means it’s ready.
4. Now add in the prepared vegetables and boiled pasta and mix it properly until vegetables are perfectly coated in the sauce. If the sauce is too thick at this point in time, you can add 2-3 tablespoons of water or milk. You have to cook the mixture for 3-4 minutes to avoid overcooking pasta.
5. Now add grated cheese into the mixture. Once the cheese is nicely melted, your delicious white sauce pasta is ready to be served.
